Alternative Menu for Thanksgiving!!!

 CHERRY CROSTINI WITH PECORINO ROMANO       Apetizer

 

Serves: 20 servings, Prep: 5 minutes, Cook time: 5 minutes

1 Loaf of Trader Joe’s Organic Whole Grain Bread

1 Jar of Trader Joe’s Organic Cherry Preserves

1 Package of Pecorino Romano Cheese, grated, for garnish

 

Preheat oven to 450 degrees.

Slice bread into ¼” pieces. Spread each slice generously with Cherry Preserves. Toast for 4 to 6 minutes or until golden brown.

 

Remove from oven and top with shaved sliced of Pecorino and serve!

 

MAPLE MUSTARD CHICKEN                                     Main

 

Serves: 4 to 6, Prep: 5 minutes, Cook time: 20 minutes

½ Cup Trader Joe’s Whole Grain Dijon Mustard

¼ Cup T.J’s All-Natural Canadian Maple Syrup

1 tbsp. Rice Vinegar

1 ½ lbs. boneless Chicken thighs (available frozen)

Salt & pepper

 

Preheat oven to 450F.

Combine the mustard, maple syrup, and rice vinegar. Place the chicken in a single layer in an oven-proof casserole, and season with sale & pepper. Pour the syrup mixture over the chicken, turning to coat.

 

Roast until interior of chicken thighs reach 155F on a meat thermometer, about 20 minutes. Let the chicken rest 5 minutes before serving.

 

PUMPKIN CRANBERRY CAKE W/PUMPKIN BUTTER FROSTING Dessert

Serves: 6, Prep: 5 minutes, Cook time: 40 minutes

1 package Trader Joe’s Pumpkin Bread and Muffin Mix

2 eggs

½ cup Trader Joe’s Organic Coconut Oil

1 cup Cranberry Juice

1 Container Trader Joe’s Pumpkin Butter

1 8-ounce container mascarpone cheese

Honey and/or Bourbon (optional)

 

Preheat oven to 350F.

Lightly oil a 8 or 9 inch cake pan or spray it with baking spray. Place the pumpkin bread mix in a large bowl. In a small bowl, stir together the eggs; oil, and cranberry juice, then add this mixture to the pumpkin bread mix, stirring to combine.

 

Stir in dried cranberries and pour the mixture into the prepared pan. Bake until a skewer or knife blade inserted in the center comes out clean, 30 to 40 minutes.

Stir together the pumpkin butter and mascarpone. Flavor with bourbon and/or sweeten with honey, if desired. Pipe or spoon a dollop of the fluffy sauce on each slice of cake to serve.
